Is it just a ship which can carry other ships? Like the Behemoth & Deep Space Dredger? Or Thargoid Carrier (but why not Thargoids with their 5 thargons?)
But then what about the bulk haulers? Why are they included?
And what about other ships? Do the dockable liners count? Emerald & TigerShark? But what about Saga? ...and what about Orisis?
Or the large Aquatics? HammerHead Hauler Carrier? Conger with rotating thingummies? Leviathan Systems Platform?
Seems the definition can be applied to most any ship with a docking bay. There ought to be some martial application I feel.
I know I intended the Leviathan to be one. But not the hOopy Casino.
I was young, I was naïve. Jonny Cuba made me do it!
I think every ship with a docking bay could be called a carrier. Some designs for large ships just use the space for additional cargo/passenger areas, and therefore got no dock. Thargons are like drones, so no hangar required.
Scars remind us where we've been. They don't have to dictate where we're going.
But then what about the bulk haulers? Why are they included?
Well, probably because they (should) be too large to land on a planet and therefore need additional ships for loading/unloading.
A better reason for classifying bulk haulers with carriers is they all have the same problem -- they cannot fit through a standard main station docking port...and thus cannot dock with most stations.

True, but bulk haulers do have docks and therefore could "carry" ships.

But do they have docks? What about the Hammerhead (Aquatics)?
But do they have docks? What about the Hammerhead (Aquatics)?
ADCK's bulk hauler and super bulk hauler have, not sure if all of them. Please correct me if I am wrong, but the Hammerhead to my believing is not classified as dockable.

"Dockable": the page was constructed by ADCK (possibly to advertise his ships?) in 2010 and has not been touched since. I do not know his definition, I now know yours and Switeck's. I'm hoping that one or two others might chip in too and then I might be able to make some sensible decisions as to what to do with the page.
Your definition fits in with the way I feel (but I don't know), but Switeck's seems to accord more with ADCK's.
Oolite Ships is just Vanilla game ships.
Oolite Stations is the pretty pictures counterpart to the lists of oxp's (Category:Oolite stations & Category:Dockables OXPs)
Oolite Miscellaneous dates back to 2010 too, with one addition by Maik in 2012

Yes, all variants of ADCK's Bulk Haulers and Super Bulk Haulers have docks. I just made a note to myself that this package needs conversation and an overhaul before I can add it to the expansion manager.

Right. So we go with your definition then, unless there is a good argument against.
So with liners, docks are implied for Aurora, Saga & Orisis, despite presumably being absent from the shipdata.plist
So does one include them, as they are described as such, despite not being such in "game terms"? What do you think?
