For me I would nominate:

Giles making the game self interacting.
Giles's genius of making Oolite expandable with OXP's.
Nic's PC installer (for us windows users)
Ahruman's heroic picking up of the baton, (recently with AnotherCommander's assistance)
The Kleptohud (can't remember who designed it)
Wormholes and Qmines
Little Bear's Assassins OXP
Dr Nil's Your Ad here OXP
Shaders
Griff's ships/stations (in fact everything he's done)

plus incrementally, ship and planet textures

Without deep thought these are the ones that spring to mind for me, and IMO pushed back boundaries, but hey different strokes for different folks, so what moved the earth for you.

I would add the initial JavaScript branch development by dajt and further rewrite/expansion of it by Ahruman.

:idea: Also the development of the debug console by Ahruman and its Windows port by kaks. That was definitely a defining moment, as it opened up testing in a way that was inconceivable before.

Matt`s Galactic Navy and UPS Courier by Eric (also games in the game), & Ramirez Fuel Tank, make a big difference in-game all three for me, and add something to the "Oolite Mythology".

the OpenGL shader support and (crucially) Ahrumans shady cobra oxp, i've been stealing his glsl shader code ever since it came out for my own personal glory :D
