Is there any OXP that works with the current Oolite version and allows saving the game outside of stations?

No. And unless something has radically changed lately, not even possible to oxp.

Wildeblood had released a "Save and jump" OXP, which allowed you to save just before a jump, but I think there were a number of caveats to using it. He's withdrawn it, so it's unavailable now.

The game saves in two ways. Manually and optionally automatically on launch I think. Theoretically, it's possible to move the player to a station on demand, allow the player to save and on lauch move the player back. Ooniverse will keep on living though.

I would advise stilts for the quagmires, and camels for the snowy hills

Thank you all for the responses. These days, I'm only able to play any game for 15 to 20 minutes at a time so being able to save anywhere would be useful but not a huge deal.

I have the same issue.
I just make cargo runs between systems right now to keep me making credits.
Once I get more time and my new generator gets here I'll get back to exploring, hunting and missions.
For now it's load up, jump, dock, and sell.
