My Mac (dual G4, 1.25GHz, Tiger) has two screens. The primary screen is an ATI Radeon 9000 Pro in an AGP slot. Nice and fast. The secondary screen is an ATI VGA in a PCI slot. Slow. Not surprisingly when Oolite (any version) runs on my primary screen it's great, but when it runs on the secondary (or any part of the window extends to the secondary) it's almost unplayable. That's understandable.
However, when I go to full screen, the speed sinks to the lowest common denominator, despite the fact that the image only appears on the primary display (the secondary display goes black).
If this is simply the way graphics on the Mac works, so be it. But if there's a setting to allow fullscreen mode to only talk with one screen, that would make a big difference. Someday I'd like to see what playing with the mouse is like.
