It certainly ended up being fairly epic! But at least I have a working build environment on Windows, Mac and Linux now.

While I'm definitely glad you considered my ramblings of help, I'm still a bit uncertain why the "$LD_LIBRARY_PATH" solution didn't work for you.
My only bet here is that you might've needed to also bring in the "deps" folder libz.so.1 along with libpng.
From the "ICC" warning you're getting it seems that you're running with a modern (system's) version of libpng, which might not appreciate the (8 bit colour, I think) format most of the images/textures are coming as.
