I'm playing this game again recently but I'm getting bored of viper mk.3, I want to try different ships.
I mostly fight with pirates or do bounty hunter job so I want to have a ship optimized for fighting, so I want these specs:
1. much faster speed and maneuverability with very small or no cargo bay
2. more missile slots because 4 slots were always not enough
3. Decent shields and hull armor, doesn't need to be much better than viper mk.3 but shouldn't be a paper plane too.
4. same upgradable parts as viper mk.3, except cargo bay related ones and side cannons.
I looked for ships in each planets but it seems all other ships in this game are just an inferior version of viper mk.3, both the cargo bay size and other performance.
So I'm taking a look at mods but there are so many mod ships to choose, what would be a good and not-so-overpowered choice for fighting ?
any ships good for fighting but anything else ?

You could try the Wolf Mk.II - Griff's version is a very tasty-looking ship! Available from the in-game manager, I believe.
I would advise stilts for the quagmires, and camels for the snowy hills

The Wolf Mk.II has Elite canon going for it too (from Amiga Elite, I think).

As usually you are right, it is a canon ship, honestly not sure which version but Amiga is a strong possibility. Adding it to core-Oolite would not even violate the original.

As are Griff's Gnat, Griffin, Hognose (I think), and Ophidian (there are probably others, but I've not checked Griff's stuff lately).
The Ophidian is a fine trader's ship, with lovely lines. There's a Cougar out there somewhere too, and a Copperhead.
A beautiful snake, is the Copperhead, capable of delivering a dry bite as a warning!
