Once one becomes Elite, is there any point playing on?

I suppose that depends on whether or not you see becoming Elite as the point of the game. It's an open-ended sandbox, after all. But it is a good place to maybe consider retiring a Commander, for a while at least, and perhaps beginning a new one, maybe with a different mix of OXPs, or different starting circumstances.

You can keep amassing money so that you can buy better - even 'uber-' - ships! Also, some expansion packs, such as my Interstellar Tweaks, get more difficult, and make certain fun things more likely, the higher the player's rank. (For instance: if you've never docked in witchspace with a Generation Ship that's been hijacked by Thargoids, then you haven't lived!)

Apart for the overwhelming wave of nostalgic joy. No, no there isn't. If you want something where total victory is intransigent and people keep moving the goal posts so you can never really actually win I would suggest the Witcher 3 or possibly league of legends?

Well, I've got a Elite rating in Oolite and yet I don't feel I am winning / have won. (It's not Charlie Sheen terrirory: win here, win there, win win everywhere.) For, with the newer, more dangerous version of the game, and my OXPs - and despite an uber-ship - I get annihilated all the time. Lack of practice may also have something to do with it. I prefer designing OXPs to actually playing, mostly.

Still, I think one version of Oolite had an 'archangel' ranking, above Elite; I vote for having that introduced, but not officially documented, within Oolite! Actually, though, that reminds me: various OXPs introducing their own ranking systems. So one can try to get to the top of those, too. I think some of the escort or haulage OXPs qualify, as well, I think, as at least one of the Assassin OXPs.

That was Elite Plus - but it was merely a title (replacing Commander), not a combat rating.
I would advise stilts for the quagmires, and camels for the snowy hills

I never was Elite with the C-64 Elite, although I've played it for a long time. At some point, it was just shooting, shooting and shooting, and I didn't even know at the time how much kills I would need to become Elite.

In Oolite there is so much more you can do and look at, even if you don't install many OXPs. So becoming Elite is not a goal for me and I will not see it as a reason to put the game aside. My first goal is to complete all default missions and perhaps complete the round trip through all 8 galaxies/sectors, and then... I don't know... there are so many mission OXPs... and if playing gets boring I still can spend time developing OXPs.

I'm on my sixth circuit - though I seem to have dropped anchor in the Seventh Octant.

I'm still in sector 4. There isn't very much incentive to go to a new sector, and there will be even less if the core missions are completed. The only really new aspect of each sector is the distribution of stars, resulting in different long-distance contract routes.

Well, my Interstellar Tweaks makes the skies a bit different from galaxy to galaxy, in witchspace space - but the spectacular witchspace vistas are few; perhaps I should change that. Also - to continue my tireless plugging of my OXP (which I did create in large part to increase the variety of the player experience) - there are more interstellar asteroids in some galaxies, and such like.
