How do you switch from one pylon missile/mine/whatever to the next without firing the first one?

The 'y' key will do that (or an assigned joystick button) - see Combat Controls here (or the Oolite RS.pdf contained in the main Oolite folder).
I would advise stilts for the quagmires, and camels for the snowy hills

If you want more room on your Pylons you might want to try the APRIL OXP or fly something like a vortex
Oolite is Ooheavy... Cpt says "Write on Commander"
