I guess the bottom line is I'm trying to figure out how all of the various retextures interrelate - specifically Griff's versus the *current* defaults. Griff's ship retextures appear to be from 2010, but they appear to have better light (specular) interactions than the vanilla versions, which according to the wiki have been in place since 2014. Unless the images of those ships don't have lighting applied...?
I just want more pretty things!
think of the 'griff 'retextures' more like a mod that will add some effects to the ships not implemented in the standard game, the oxp pre-dates the new lovely metallic lighting in Oolite unfortunately, so you loose that and go back to a more basic "specular intensity" texture based lighting, it sort of looks OK, but it's a lot duller than default oolite though, the ships can be hard to see.
the griff oxp adds some special effects to the ships at the expense of needing more texture memory and graphics card thinking time:
1. colour engine glows that react to ship speed, a laser temperatur heat glow dependant on laser temp, a hull heat glow dependant on ship temperature (actually hull temp effects might actually be in the standard game)
2. 'hull lights' that react to ships current alert level
3. randomised decals on NPC ships and a decal on the player ship that can be swapped it for a custom image (by changing a png image file in the oxz)
4. grime & dust appearing on ships when they need maintenance - possibly not on all the ships, think it might just be some of the later ones that have this
5. random paint scheme colour on NPC's and player ships - there's an amazing repaint oxp out there too that lets you change the paint colour on the player ship, ah can't remember the name - respray i think although there are more than one OXP with that name, i think the author is Captain Murphy ? has a smurf for a forum avatar i think edit: found it:

if you want to add a few in, i think the cool ones are the moray and the thargoid ones, both look especially cool when they get angry, the rock hermit looks OK with some light animation along the docking tunnel, maybe the police vipers have a fake reflection effect on them - i'd probably not bother with the rest, i think they look better when drawn by standard oolite and Another_Commander's spec/gloss pack that Cholmondely mentioned above:
