Hi, severe! First of all welcome to the boards and of course to this great game!

I'm having trouble with both versions. As near as I can tell I'm just gettin the standard cobra, regardless of resolution - is this supposed to replace the standard Cobra MkIII or is it in addition?
All ships that came out of the "Pimp my Cobra"-competition are
additions. You will see them every now and then as alternatives to the native Cobras, but not in huge numbers. So you may have to explore quite a number of the CobraIII's you're encountering until you meet a DWCobra (or any of the others). And you have to get
very close to it to actually notice the texture differences. Features like the landing gear or the pilot become
only visible if you have shot off the parts covering them. This means that (1) you have to get into a fight with the ship (which may harm your legal status) and (2) you have to aim very good in order to shoot off
just the flaps, or engine parts, or the cockpit window,
without blowing up the entire ship.
All of this is possible and doable. So just have a try, and probably see it as an aiming exercise.

You may have noticed now that we are talking about NPC-ships here.
None of the "Pimp my Cobra"- ships will replace
your ship. If you are flying a standard CobraIII
before installing let's say the DWCobra, then you will fly your standard CobraIII also
after installing the OXP. You may, however, buy a DWCobra (or any of the other pimped-up ships) in your nearest shipyard, depending on its availability, of course. Must of the pimped-up ships, though, are of course considerably more expensive than the original one (well, what else would you expect?). So you will need a lot of money before you actually may get one.
