Multiple examples of the same author allowed (but not the same "universe").

Jack Vance, To Live Forever (aka Clarges … Jack, man, I love your work, but that's a terrible title.)

Does Dave Bowman become immortal? It's been a long time since I read the other Odyssey novels.

Again, going for the left-field approach, how about every major character in Piers Anthony's Incarnations of Immortality series.That would be Death, Time, Fate, War, Nature, Evil, Good and Night (oh hang on, the sneaky beggar has brought out another volume since I read them! Bar steward!) Of course the office-holders themselves are not immortal, merely holding the office for a period, but the offices themselves are either immortal or at least, never-ending. Sorry - the incarnation of War dies whenever there is no war going on on Earth. And quite what happens at the heat death of the universe was never discussed, even by Chronos in his backwards interactions with other characters.
Anyway, that's eight immortals, one of whom might not actually be immortal, and one whose card has appeared from up the author's sleeve while I wasn't watching. But I suppose that would all count as one universe.

The titular character in Claire North's The First Fifteen Lives of Harry August has a sort of immortality … would that count?

Conrad Nomikos, the lead character of Roger Zelazny's This Immortal (which incidentally tied with Dune for the 1966 Hugo Award for Best Novel but seems to have sunk into obscurity)

OK, since I've spent most of the evening writing ads for photographic gear on eBay, let's have five SF stories / comics / films / etc. in which photography is important or at least one major character is a professional photographer. Only one per universe - and I'll go with one of the easiest as my example, the DC comics universe, where Jimmy Olsen is (usually) a professional photographer.

If games are allowed, there's Jade, the principal character in the 2003 videogame Beyond Good and Evil. She's a photojournalist, and one of the objectives in the game is to photograph as many unknown alien creatures as possible.

That's a good one, they're an important plot point so definitely qualify.

Two to go! And bonus points for spotting the one where "two" is a VERY important part of why cameras are important.

Charles Stross's novella "Concrete Jungle" involves the rollout of the SCORPION STARE project, a special upgrade to the UK's CCTV system to help counter unusual threats … it's a system which needs two cameras operating simultaneously.
