Definitely The Colour of Magic; page 46 of my copy, a version of the classic "Appointment in Samarra" (?sp) story:
I was reading Pratchett before it was cool. Heard about Discworld (via a White Dwarf article) just after The Light Fantastic came out and started the series from the beginning with The Colour Of Magic. In addition to the snippet cited above, I remember Death being the one who hands over the lighted taper that an innkeeper is using to start a fire to file an inn-sewer-ants claim (leading to the Great Fire of Ankh-Morpork), and a number of other memorable moments too. There are plenty of good bits in The Light Fantastic, and a few more in Equal Rites, and tbh I don't know where anyone would have got the idea that Death didn't appear until Mort, much less put it on a website. Mort is the first to feature him as a central character, but he's very well established by then.
