Clue: The inclusion of that sort of thing in their work is not uncommon for the author. The same book which includes the flexagons also includes Conway's Game of Life, and another one of their books (outside this trilogy) included sprouts.

Still no-one? The author has been mentioned relatively recently in this thread. The trilogy as a whole covers the adventures of some humans and some geometrically-named aliens in a multiverse.

The three human protagonists each have a different archetypal diet (one of which requires some handwavium from the author to justify, as it's not usually found in humans). The aliens have the same diet as one of the protagonists, and while fungus-like in micro-structure, resemble a species of shark (though airborne rather than aquatic) in large structure. Diet in general as an extended metaphor for human invasion is a theme of the series.

It's searchable from what I've already said provided you guess the right keywords, but that's probably only enough to confirm a guess. Unfortunately the best keyword is part of the title of the trilogy itself, so I can't give you that.

Okay: the name of the trilogy as a whole is four words. The names of the three books in the trilogy are all single words, which each appear to begin with the same letter as the first word of the trilogy's title (but the third one actually doesn't). The first book is a creature defined by its diet, the second is a bird, and the third only looks domesticated.
