Cargo contracts are generally less profitable than standard trading due to distances involved and reduced profits per TC. Only by hauling precious cargoes (and often more than 1 at a time) are they typically more profitable.
Mining with the "typical" mining-related OXPs is probably more profitable than standard trading, though it may be time-consuming unless your ship can haul at least 30 TC at a time. Getting a few asteroid shards which yield 3+ kg (or g) of gold, platinum, or gemstones will do it.

Agreed, though the precious cargo contracts are considerably more profitable and you don't even need a freighter to take on more than one at once.
My latest thoughts on how they might be better balanced are in this thread, though I don't know if I'll do anything before 1.80 on that.

Oh, certainly, and people who want to do mining probably would do that - though, I think people who want to use trading as a career rather than as a source of income for other activities might also install OXPs to make it more interesting.
