Or should I say a case of copying from the Berlios page and pasting instead of what I have there now?

First, in your Oolite AddOns folder, create a new folder and call it ‘Config’. Then copy the keyconfig.plist and paste it into that new folder (Config). Then open this new keyconfig.plist in Notepad++ and edit it to your preferences. When done, save it, then restart Oolite holding the shift key down until the spinning Cobra appears… that is the best way to do it.

Either edit a copy of your keyconfig.plist, or use the one from BerliOS. Save it as keyconfig.plist and place it in a folder called Config as El Viejo suggested in your AddOns folder, and you should be good to go.
And hold down the 'shift' key as you start the game - untill you see the spinning Cobra.

I took matters into my own hands before the last couple of answers, and simply copied the Berlios keyconfig instead of what was already there and saved it.

I restarted the game as suggested while holding shift and everything is done!

Have updated the wiki, giving an alternate download location on Box as the original file is hosted on Berlios, and I believe that site will be closing soon.

I must admit, I prefer the original BBC controls too, and use the file from Berlios.

Doing something else, I noticed that the keyconfig.plist for the BBC on that page is outdated. It has still the "D" key for docking and misses a lot of the newer keys. (I'll update that file later today [EDIT: done])

Somehow an oversight as the keyconfig.plist for the BBC that ships with al mac releases has that plist updated correctly. It was probably done manually and it was forgotten we have an official version at Berlios. All Mac releases of Oolite have a folder called 'Extras' that contains the keyconfig.plist you asked for. I'am not sure if other versions contain it as the final package is assembled manually for each system and by different people.
