One of the most useful things I've done since starting to playing this game a few days ago is to map the yaw controls to the left and right cursor keys and move the roll control to the < and > keys.
It makes docking a little more "interesting" however is does make getting your cross-hairs over your opponent a little easier.
My suggestion would be to add a yaw indicator to the HUD just as the pitch and roll ones already have.. as the only way I even knew you could yaw the craft was to read through the forums and add the yaw control to the key list. The lack of an indicator seemed to suggest the yawing wasn't even possible.
Yaw indicator on HUD.

I am sure this will be done in the MNSR¹, if it will be decided that yaw-controls are to become a permanent feature of the game.
Note that the yaw-controls so far have been introduced as an experimental feature in the test-releases only, and therefore they may not become a permanent feature of Oolite.

I discovered the yawing feature by accident - as these are "space" ships and not "air" planes its a sensible addition - are there any additional external graphics (steering thrusters and the like)?

No (there aren't any graphics for turning thrusters as well). It is just an experimental addition to the functionality, in reply to user requests (I believe this is the thread where you can follow up on the development).
