It gets wierder...
Loading ANY save game file would give me 20T of fur !
After Closing and restarting OOlite this no longer happens.
So, somehow after trading in fur I recieved a free 20t (I never had the cash to pay for this) and this exceeded the max capacity by 20t.

Thanks for the welcome ! I dont think its the same bug as the two suggested because I did not buy a large cargo bay, though it'll probably be related. To my best recollection I bought the fur available (ie using the enter key) and then noticed 40t had been transferred after hyperspace. After selling...
