Are you sure you don't have a sticky key? As in, sometimes (or most of the time) it's always "on"? Try remapping the pitch keys temporarily to some other keys by editing keyconfig.plist and see if the problem goes away.. (copy the Oolite\oolite.app\Resources\Config\keyconfig.plist file to...

I can only guess there, but maybe you have mouse steering activated (by accident). You can toggle Mouse steering with Shift+M. If turned off all the controls usually automatically center themselves.
