...but, and forgive me if I'm wrong here, can't you connect a PC to a 42" HDTV? I mean, I have a HDMI port on my PC and surely (if I had enough money, lol) I could plug this into a HDTV and use that as my monitor?

Wow! That looks amazing in-game, Griff's detail to on the modles surpasses the work seen on many commercial titles.

On a side note, is it easy to create videos in Oolite? (I'm sure this has been mentioned before, so sorry if so, and does anyone have a link if it has to the answer? :) )

If your system can handle shaders I advise getting some eye-candy OXPs to bring your copy of Oolite into the 21st century. Neolite is awesome, I have this OXP and I really like the redesigned ships, especially the Megaships! Griff has also been remodelling ships so definitely get your hands on those...

How about adding a script command that changes the galactic seed when you jump beyond galaxy 8 and another to switch it to galaxy 9? Or is that even more complicated, lol?

In theory you could already write an OXP for this galaxy, as long as you state in the script to use galaxy 8 but I don't know if the program will accept that or not (Haven't tested - will do so soon - waiting for microwave to *bing*).
