I would suggest going to your game options screen and making some performance adjustments. Turn on reduced detail, turn detailed planets off, and turn shaders completely off. Hi Jonah. From your description it sounds like you installed Oolite from the Ubuntu software repositories. The last time I checked they were offering a very outdated version of Oolite. You might want to give us some more details on your setup, as the solution is dependent on what operating system you are using.
